The rural folk of Central America cook up variants of this dish before a hard day’s work on the farm, so you know it’s got the stuff you need to keep cranking all morning. It sounds exotic but really it’s dead simple. Eggs are full of protein, of course, but if you don’t fancy funding animal misery, choose the highest quality organic eggs you can find.
